So, I made this no bake cheesecake. The idea came around because it was recently my grandmother's birthday and we experimented with some dried apricots. She loves apricots. Not as much as lemon, of
course. But, still.
The experimentation turned into something really fun. If you process apricots and walnuts in the food processor, you get something that looks a lot like graham cracker crust.
That's when the mind starts thinking "So, what else can I do with this?" It turns out that you can do a lot with it and my first try is this
