I had to do some research to find out if there is egg in egg roll. It turns out that the wrapper really doesn't contain egg like I thought. That seemed like the most logical explanation.
From what I was able to find out, there was a recipe for something like an egg roll in a Chinese American Cookbook published in 1917. The filling was wrapped around a flat sort of egg paper.
This evolved into what we know as egg rolls today, but we now wrap them in a wrapper made of wheat flour.
