I had previously made some chocolate cookies for Halloween. I purposely used the large cookie scoop and the good baking pan so that the cookies were soft.
This time, I used the small cookie scoop (and the good baking pan, of course). I let the cookies bake until they were thin and crispy, making them perfect for sandwich cookies.
Now, the secret! Once you add the peanut butter filling and let the cookies sit overnight, they end up being the perfect softness.
