I'm not going to say that I don't like shrimp because I do! I just happen to like crab a lot more. So, when I started developing this recipe, I decided to go with imitation crab.
Not only is it easy to prepare but it's so much less expensive than real crab, especially with prices being what they are right now.
I'm really not ready to make traditional ceviche yet so using imitation crab seemed like the best alternative for me. I believe I can get inexpensive little salad shrimp, already cooked, at my store as well. Maybe next time, I will try both!
