This week, I have a new cookie for you. I don't feel like the shortbread cookie gets the love that it's due. It's a buttery soft cookie that almost melts in your mouth. So delicious.

With this one, I wanted to increase the flavor profile by using bits of dried apricot and pecans. The pecans give it a little crunch, while the apricots give it a little chewy sweetness.
