Migas and Chilaquiles are both traditional Mexican breakfasts. They're both intended to use up leftovers. They're both delicious and satisifying. But, they're different!

These Chilaquiles Rojas are tortilla chips, simmered in a homemade Guajillo sauce. You add some queso and crema to the top. Serve a fried egg and beans on the side. 

This Mexican breakfast uses leftover tortillas and whatever sauce you have on hand. You can even use green sauce for Chilaquiles Verdes!

Mexican Migas, on the other hand, is a dish made with tortilla chips and scrambled eggs. 

You can immediately tell the difference. One is tortillas smothered in sauce and simmered. The other is tortillas cooked with scrambled eggs.

Both of these recipes are perfect for breakfast or lunch. And, they're great for those breakfast-for-dinner kinds of nights too.
