As it turns out, Colorado in this instance means red color, not the State. And, it's certainly red, right?
This Chile Colorado recipe is made
with pork, but could also be made with beef, if you prefer.
That deep red color comes from the chiles. If you want a mild dish, use California chiles. Try it with Guajillo or New Mexico chiles if you want it more
spicy.
If you like a deeper, more hearty flavored sauce, try adding ancho chiles as well. If you're not afraid of spicy heat, throw in a few chiles de árbol too.
