This Caldo de Queso is a delicious Mexican soup made of potatoes, green chiles and queso fresco cheese. I like it extra creamy so there's a little bit of half n half in there too.
Is it just me or are the potatoes at the grocery store super small right now? I had to use five potatoes to get 1 1/2 pounds! Maybe it's because of it being winter. I remember just a few months ago, we had potatoes so big they weighed over a pound each.
