In the last three years, since starting this website, I've decided to try to make everything as fresh as possible. That includes sauces.

I've used canned Enchilada Sauce in the past but, it turns out that making it yourself is not only easy, but it also tastes better without anything extra that's added.

This Red Enchilada Sauce is made using dried chiles. It's really not difficult to use dried chiles. You simply reconstitute them in water along with onion and garlic then blend at all together.

Last week, I ran into a situation where I wanted to make some Chilaquiles for breakfast. Chilaquiles are basically just enchiladas deconstructed.

Wouldn't you know it, though? There was no enchilada sauce in the refrigerator or freezer!

All was not lost, though. I pulled out my recipe for Quick Enchilada Sauce, which can be made in only 10 minutes!
