Every year, there's an abundance of zucchini. I'm not sure how it happens. One minute, no zucchini. The next minute, you're drowning in it.
I developed a new zucchini recipe last summer and I can't wait to make it again after the next harvest.
Although I've used regular pasta, if you have more zucchini, you should really make some "zoodles", zucchini noodles. You'll be using the zucchini for the noodles AND the sauce. And, that's a good
thing!
You can serve this pasta as a side dish, or add some chopped chicken to make it more hearty.
The cost of most meats has skyrocketed, but the price of Cacique Chorizo hasn't changed much (about 20 cents or so). This is an easy one skillet dinner that costs less than $1 per
serving.
