Everyone looks forward to Hatch Chile Season! Just one time a year, you have access to these delicious peppers. I like to roast and peel them then freeze them in bags to use all year.
Anaheim is the same type of pepper as "Hatch Chile" but, instead of it being grown in New Mexico, it's grown in California and, surprisingly, this makes it much more mild. Hard to believe that it's the soil and weather conditions that change a tame pepper to
spicy!
If you can't find Hatch Chiles, Anaheim will do. But while you can, substitute Hatch Chiles for any recipes for Anaheim.
