Now that Cinco de Mayo is over, it's time to think of some other recipe themes for you.
I don't know about you, but I love working with the Instant Pot! Mom and I sat down and developed four new Instant Pot recipes to make your dinner plans easy peasy.
We almost had a problem with one of the recipes, but it actually turned out to be a learning experience for me and you know I love learning experiences. Food related learning experiences are even better!
When I first started making the grocery order online, there was no beef stock available! I wasn't sure how I was going to make a beef stew without beef stock.
Fortunately, mom showed me how to make my own beef stock with ingredients we already had in the refrigerator and freezer. I made it in the crockpot and it work out wonderfully.
When mom got home from the grocery store, though, she had found one lonely box of beef stock remaining on the shelf.
It will be great that I can use the boxed one for the recipe, especially when it comes to figuring out the calorie count. But, I've got to admit that it's very satisfying knowing that I don't have to be tethered to all pre-packaged ingredients.
