The combination of mushrooms, onions and spinach is delicious. It works great for pizza so why not try it for enchiladas too?!
What could be more perfect than a Mexican food dinner on the weekend? Serve some avocado with chips and salsa on the side. Yum!
Last night, I made a batch of these enchiladas with Monterey Jack cheese. As much as I loved the Queso Duroblando we used in the original batch, it's impossible to find specialty cheeses in our area during the medical crisis.
That demonstrates the versatility of this recipe. I recommend using any nice white melting cheese. Monterey Jack works great. Mozzarella will work as well. A combination of both? Yes, please!
