Spinach and Mushrooms Enchiladas

The combination of mushrooms, onions and spinach is delicious. It works great for pizza so why not try it for enchiladas too?!

What could be more perfect than a Mexican food dinner on the weekend? Serve some avocado with chips and salsa on the side. Yum!

Last night, I made a batch of these enchiladas with Monterey Jack cheese. As much as I loved the Queso Duroblando we used in the original batch, it's impossible to find specialty cheeses in our area during the medical crisis.

That demonstrates the versatility of this recipe. I recommend using any nice white melting cheese. Monterey Jack works great. Mozzarella will work as well. A combination of both? Yes, please!

Spaghetti Meat Sauce with Canned Tomatoes

Looking for another comfort food this weekend? Grab some canned tomatoes from you pantry and you can make this easy and delicious meat sauce with only one pound of ground beef.

Rotini pasta is my favorite pasta shape. I know vermicelli is most popular but rotini holds the sauce in all those little grooves and twirls. This sauce is great for vermicelli, linguine, rotini, all the things. We also use it for layering lasagna and three cheese filled shells, our usual family Christmas Eve dinner.

Entomatadas with Garden Tomatoes

Last week, I mentioned that I was making entomatadas with garden harvested tomatoes. Here's a little preview shot. I'm still working on the recipe because I want to make sure that I have a canned tomato alternative for you.

Mom has given me free reign over the kitchen this week since she's started crocheting a bunch of new scarf designs and she'll be working on that for awhile.

I have an entire stack of corn tortillas that mom has been calling the "Tower of Tortillas". In a pandemic, you take what you can get. If your store has only HUGE stacks of corn tortillas, you work with it. Am I right?!
