When you're on lockdown, you know that finding some things at the grocery store has been tough. Take ground beef, for instance. Our grocery store is really low on ground beef. Even if you can find it, it's really expensive.
As an alternative, we were able to find some ready-made meatballs in the freezer section. I set about developing a recipe using frozen meatballs. What a time-saver!
Authentic Mexican albondigas soup is made with uncooked meatballs that you put directly into briskly boiling broth. But, we're taking a short cut today with these meatballs and we're using the Instant Pot too! Tell abuela to avert her eyes. hahahaha!
