Mom first taught me to make entomatadas when we harvested the fresh tomatoes from our garden. Knowing that not everyone will have fresh tomatoes, I needed to test the recipe with canned tomatoes as well.
Not sure about entomatadas? They're like enchiladas except that enchiladas are made with a chile (pepper) based sauce while entomatadas are made with a tomato based sauce.
This recipe is like a Mexican version of grilled cheese and tomato soup. Delicious, warm and comforting.
