This week was pretty much gloomy and wet every day. It seemed like the perfect time to pull out the Instant Pot.
One of my favorite recipes is Picadillo which is a kicked up version of your typical meat and potato hash or stew.
I can tell that I'm starting to get more accustomed to spicy food because I used a serrano chile (in addition to jalapeno) this time.
With just the one serrano, it was sufficient to give the dish some heat without overpowering it.
Mom has taught me that you don't need to make it so hot that you can't taste the food itself.
