I'm sure you've seen imitation crab at the store. I know you probably think it's mystery meat like hot dogs or bologna, right?

As it turns out, imitation crab is actually made from Wild Alaska Pollock. It's mixed with starch, salt, egg white and crab meat.

This allows the mixture to be shaped into the appearance of crab for a less expensive protein rich crab-like food.

Imitation crab is delicious. I eat it for snacks or with meals. I use it to make Crab Pasta Salad. I've also used it in my popular Crab Rangoon Crescent Rolls recipe.

I was able to try natural lump crab for these crab stuffed mushrooms and wow, what I didn't know about crab. 

I wasn't expecting there to be such a difference in taste! It's more expensive than imitation crab but it's really worth a try.

You can make these stuffed mushrooms in the air fryer or the oven. You will love them whether you use imitation or natural crab.
