After some research, I was able to find something called tempeh. It's pronounced TEM-PAY (like pay day).
Although also made with soy products, it's not smooth and silky like tofu. The texture seems more like a soft granola bar.
There isn't much taste to it but it soaks up all the flavors of a marinade. For fajitas, I used my favorite spices and some citrus as well.
Once you put it in a tortilla and add all your fixings, you won't miss the meat at all. Well, maybe a little, but I ate every bit of this without blinking an eye.
If you still want your beef or chicken, go ahead and use the same marinade.
