What's authentic?

To make enchiladas, you typically dip the corn tortillas in enchilada sauce before rolling them around a delicious filling.

But, what is this sauce?

You can tell by breaking down the word enchiladas. It means "in chiles".

For authentic enchiladas, you don't use tomatoes.

Red Enchilada Sauce

In my recipe for Red Enchilada Sauce, I've used red dried chiles to give it the red color. I prefer using dried chiles but I've also included some tips to use with dried powder, if that's all you have in your pantry.

Although, authentic enchilada sauce doesn't use tomatoes, that's not to say that you can't.

Feel free to use tomatoes, if you like. It's up to you. These are typically called Entomatadas rather than Enchiladas.

Cheese and Onion Entomatadas

Entomatada, when broken down, basically means "in tomato" rather than "in chiles". These are Cheese and Onion Entomatadas. They can be eaten for any meal of the day, or even as a mid-afternoon snack.

There is another that I haven't tried yet. Enfrijoladas. Can you guess the sauce for these? It's "in beans" for a blended sauce made predominantly of beans rather than chiles or tomatoes.

Like many Mexican foods, you use what you have on hand. When something tastes fantastic, it doesn't really matter what it's called.
