Cheese and Onion Entomatadas
Entomatada, when broken down, basically means "in tomato" rather than "in chiles". These are Cheese and Onion Entomatadas. They can be eaten for any meal of the day, or even as a mid-afternoon snack.
There is another that I haven't tried yet. Enfrijoladas. Can you guess the sauce for these? It's "in beans" for a blended sauce made predominantly of beans rather than chiles or tomatoes.
Like many Mexican foods, you use what you have on hand. When something tastes fantastic, it doesn't really matter what it's called.
