Oh, speaking of summer sausauge...
Do you know why it's called summer sausage?
It's because it required only a little or sometimes no refrigeration at all. It could be kept for eating in the summer instead of only keeping it during the winter months.
These days, though, you will probably want to keep it in the refrigerator anyway. We live in a different time.
Even though summer sausage was made in Eurupe for hundreds of years and not refrigerated, we have a different climate than Europe.
