I'm not gonna lie. Those little bitty chiles de arbol are hot as dragon fire to me. So, in answer to the question of which is hotter, red sauce is hotter.
Red sauce doesn't HAVE to be hotter, of course. If you stick to all California and Ancho peppers, you're safe.
But, if you jump into chipotle, guajillo and dragon tongue chiles de arbol, you may need to go more slowly at first.
It turns out that I LOVE chipotle with its smoky heat. I'm not going to go overboard, though.
Red chiles have a way of starting off with little effect then lighting your belly on fire. haha!
