Frijoles Puercos Sinaloa Style
I'd like to introduce you to Frijoles Puercos, the refried beans of your dreams.
I started out by soaking the beans overnight. I checked about halfway through and I'm glad I did. This was my first time soaking beans and I didn't realize they would need so much water.
The next day, it only took about 2 1/2 hours to cook the pintos to the point they could be smashed easily with a potato masher.
I used a one pound bag of beans so I ended up with quite a bit of the refried beans. None of it went to waste. It may have gone to waist, though.
I made burritos with a little shredded cheese and sour cream, then I froze them. When I got ready to eat one, I put it in the air fryer for about six minutes.
They were so good! I'm not even a huge fan of beans so I was shocked at how much I liked them.
But, I should have known. You can't go wrong with BACON!
