Rehydrate Dried Chiles for Your Next Recipe

I use dried chiles frequently when making Mexican sauces. I prefer to place the chiles in a saucepan to boil in water for about 15 to 30 minutes, depending on the chlie.

The chiles will be soft enough to put in a blender to make your favorite sauce.

I recently made Red Enchilada Sauce. I know that there are many recipes out there for sauce made with ground chile pepper but you know that I like to go straight to the source.

I used Ancho chile for a little bit of smoky flavor. Red California chiles give a sweet and spicy taste. Chiles de Arbol are solely for heat. They're small but mighty.

Do you wash dried chiles?

Yes, absolutely! Always wash the chiles.

The normal conditions for drying chiles is in the open air. They could have all kinds of debris on them.

It's easy to wash them before cooking them in water.

If you plan on grinding them to a powder, wash them first then allow them to air dry for about 24 hours.
