I love pumpkin and I love quick no bake desserts. This was the motivation for this incredible pumpkin cream cheese dessert.

 

I've made this three times in the last 10 days already. My grandfather suggested that he needed a gallon of it! ha!

While it's completely okay to use a graham cracker crust for this, I have to tell you that my favorite way is to put Pecan Sandies in a food processor to make the crust instead of graham cracker.

 

I hadn't even tried Pecan Sandies before this. But, wow, the buttery cookie with some bits of pecan. It makes the best crust I've ever tried. It was amazing.
