This Tortilla Quiche Bake is such a wonderful recipe.
Make it in the oven or the air fryer. You have an opportunity to add some vegetables that may be languishing in your refrigerator.
This is a protein packed breakfast or lunch with its eggs and cheese. The spinach, onion and tomato add delicious flavor and color. Add some cooked sausage or bacon for even more
protein.
You can even use a low carb or wheat tortilla. I'm thinking I could use three overlapping corn tortillas instead. I can't wait to give this a try. It's honestly so easy that I could make it everyday.
