Did you know that Anaheim Peppers and Hatch Green Chiles are basically the same pepper? The difference is where they are grown. Due to the heat, weather conditions and soil in Hatch, New Mexico, the chiles are hotter than when they're grown in California. Nature, right? Beautiful.

other easily. Just remember that Hatch will have more spicy heat.
Here are some recipes I've made with Green Chiles. I will sometimes use canned green chiles. But, remember, you can always use the fresh chile instead.
